Wonton Filling
- 8 ounces cream cheese softened
- 1 cup sharp cheddar cheese shredded
- 4-5 jalapeños seeded and finely diced (about ½ cup)
- 2 cloves garlic minced
- 3 slices bacon cooked and crumbled (optional)
- 2 green onions thinly sliced
- ½ teaspoon onion powder
- ¼ teaspoon smoked paprika
- salt and pepper to taste
Wonton Assembly

- 1 egg beaten (for sealing wontons)

In a medium bowl, combine the softened cream cheese, shredded cheddar, diced jalapeños, minced garlic, crumbled bacon (if using), sliced green onions, onion powder, and smoked paprika. Season with salt and pepper to taste, then mix thoroughly until well incorporated.
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or a silicone mat. Create a small assembly station with your wonton wrappers, filling, beaten egg, and a clean surface for folding.
Place a wonton wrapper on your work surface. Add approximately 1 tablespoon of filling to the center, being careful not to overfill. Using your finger or a small brush, apply beaten egg to the edges of the wrapper.
Fold the wonton wrapper diagonally to form a triangle, pressing the edges firmly to seal. Make sure no filling is escaping from the edges. For an extra decorative touch, bring the two opposite points together and seal with a dab of egg wash.
Place the sealed wontons on your prepared baking sheet, spacing them about 1 inch apart. Lightly spray or brush the tops with cooking oil to encourage browning.
Bake in the preheated oven for 12-15 minutes, or until the wontons are golden brown and crispy around the edges.
Allow the jalapeño popper wontons to cool for 3-5 minutes before serving. This brief rest helps the filling set slightly and prevents mouth burns from the hot cheese.
For milder wontons, remove all jalapeño seeds and membranes. For more heat, leave some in.
Work with just 6-8 wonton wrappers at a time to prevent them from drying out. Keep the remaining wrappers covered with a slightly damp paper towel.
Press out any air bubbles as you seal to prevent the wontons from puffing up and potentially bursting during baking.
These can be prepared ahead and frozen unbaked for up to 2 months. Bake directly from frozen, adding 3-4 minutes to the cooking time.
