Pizza Base

  • 1 pre-made pizza dough whole wheat or regular
  • 2 tablespoons olive oil plus extra for drizzling
  • 2 cloves garlic minced

Pizza Toppings

  • 1 cup artichoke hearts drained and quartered
  • 1 lemon thinly sliced (remove seeds)
  • 1 cup mozzarella cheese shredded
  • 1/4 cup parmesan cheese grated
  • 1 cup fresh arugula
  • 1 tablespoon lemon zest
  • salt and pepper to taste
  • red pepper flakes optional

Instructions
 

  • Preheat your oven to 450°F (232°C). If using a pizza stone, place it in the oven during preheating.
  • On a floured surface, roll out your pizza dough to your desired thickness—thinner crust works wonderfully with these lighter toppings.
  • Brush the rolled-out dough with 1 tablespoon of olive oil, then sprinkle with minced garlic.
  • Arrange the artichoke hearts evenly across the dough. Place the lemon slices strategically throughout.
  • Sprinkle mozzarella and half the parmesan cheese over the toppings.
  • Transfer your pizza to the preheated oven and bake for 12-15 minutes, or until the crust is golden brown and the cheese is bubbly.
  • Remove from the oven and immediately top with fresh arugula, lemon zest, the remaining parmesan cheese, and a light drizzle of olive oil.
  • Season with salt, pepper, and optional red pepper flakes. Slice and serve immediately.

Notes

For a crispier crust, pre-bake your dough for 3-4 minutes before adding toppings.
The oil base creates a protective barrier that prevents the crust from becoming soggy.
Slice lemons paper-thin to ensure they cook properly and don't overpower other flavors.
Use room-temperature cheese for the most even melting.
For a vegan version, substitute the cheese with plant-based alternatives like cashew mozzarella.
