- 2 ripe peaches sliced (yellow peaches offer the sweetest flavor profile)
- 1 lemon freshly juiced (approximately 2 tablespoons)
- 2 oz white rum Bacardi or Havana Club work beautifully
- 1/2 oz simple syrup adjust according to the sweetness of your peaches
- 4-5 ice cubes

- Wash your peaches thoroughly and slice them into wedges, removing the pit. Roll your lemon on the countertop with gentle pressure before cutting to release more juice. 
- Place the peach slices in a cocktail shaker or sturdy glass and gently muddle until they release their juices but aren't completely pulverized. 
- Squeeze fresh lemon juice directly into the mixture, catching any seeds with your free hand. Add your simple syrup, adjusting according to how sweet your peaches naturally are. 
- Pour the rum over your fruity base. 
- Add ice to your shaker, seal tightly, and shake vigorously for 15 seconds. Strain into a glass filled with fresh ice.

No fresh peaches? Use 2 tablespoons of quality peach preserves instead.
