Crust
- 2 cups butter crackers finely crushed (approximately 50 crackers)
- 1/3 cup unsalted butter melted
Filling
- 14 oz sweetened condensed milk 1 can
- 1/2 cup fresh lime juice approximately 4-5 limes
- 1 tbsp lime zest optional, for enhanced flavor

Crush the butter crackers into fine crumbs using a food processor or placing them in a sealed plastic bag and rolling with a rolling pin. Mix the crumbs thoroughly with melted butter in a medium bowl until the mixture resembles wet sand.
Press the crumb mixture firmly into a 9-inch pie plate, creating an even layer on the bottom and up the sides. For a sturdier crust, use the bottom of a measuring cup to compress the crumbs firmly.
Place the prepared crust in the refrigerator for 20-30 minutes to firm up.
In a medium bowl, whisk together the sweetened condensed milk and lime juice until completely smooth and slightly thickened. If using, fold in the lime zest for extra flavor dimension.
Pour the lime filling into the chilled cracker crust, smoothing the top with a spatula for a professional presentation.
Cover loosely with plastic wrap, being careful not to let the wrap touch the surface of the filling. Refrigerate for at least 3 hours or preferably overnight until completely set.
When ready to serve, top with fresh whipped cream if desired, and additional lime zest for an elegant presentation. For clean slices, dip your knife in hot water and wipe dry between cuts.
For the best texture, chill overnight rather than the minimum 3 hours.
Fresh lime juice gives a much better flavor than bottled juice.
Graham crackers or digestive biscuits can replace butter crackers for a more traditional crust.
The pie will keep in the refrigerator for up to 3 days but is best enjoyed within 24 hours when the crust is still crisp.
