Ingredients
  

Mango Base

  • 2 cups ripe mangoes diced (approximately 2 large mangoes)
  • 1 tablespoon lime juice fresh
  • 1 tablespoon honey or maple syrup

Coconut Lime Mixture

  • 1 cup full-fat coconut milk for creamiest results
  • 1 tablespoon lime juice fresh
  • 1 tablespoon lime zest
  • 1 tablespoon honey or maple syrup adjust to taste
  • 1/4 teaspoon vanilla extract
  • 1 pinch sea salt enhances flavor

Instructions
 

  • Select perfectly ripe mangoes with a slight give when pressed and a sweet aroma. Peel and dice into small chunks. Pro tip: If your mangoes aren't quite ripe, place them in a paper bag with a banana overnight to speed up ripening naturally.
  • Add the diced mangoes to a blender with 1 tablespoon of lime juice and 1 tablespoon of sweetener. Blend until completely smooth, about 60 seconds. The consistency should be similar to a thick smoothie. If your blender struggles, add 1-2 tablespoons of coconut milk to assist blending.
  • In a separate bowl, whisk together coconut milk, remaining lime juice, lime zest, remaining sweetener, vanilla extract, and salt. The pinch of salt might seem counterintuitive, but it enhances sweetness perception, allowing you to use less added sugar.
  • For striking layered popsicles, pour the coconut mixture and mango puree alternately into your popsicle molds. For a marbled effect, gently swirl with a skewer. For a gradient look, mix the two mixtures in varying proportions before pouring.
  • Insert popsicle sticks and freeze for at least 4 hours, ideally overnight. If your mold doesn't include sticks with holders, cover with aluminum foil, make small slits, and insert sticks through the slits to hold them upright during freezing.

Notes

• Leave about 1/4 inch at the top of the molds as the mixture will expand when frozen
• Once frozen, popsicles can be stored in their molds for up to 1 week
• For longer storage, remove from molds, wrap individually in parchment paper and store in an airtight container for up to 3 weeks
• To easily remove popsicles, run the outside of the mold under warm water for 10-15 seconds
