Ingredients
  

Main Ingredients

  • 1 ripe cantaloupe melon honeydew or watermelon also work beautifully
  • 8 oz thinly sliced prosciutto about 12-16 slices
  • 1 tbsp fresh lime juice
  • 1 tbsp honey optional
  • 8-10 fresh mint leaves torn or whole for garnish
  • freshly cracked black pepper to taste
  • 20-24 wooden skewers or cocktail picks

Instructions
 

  • Cut the melon in half and remove all seeds using a spoon. Using a melon baller, scoop out approximately 24 evenly sized melon balls. If you don't have a melon baller, simply cut the melon into 1-inch cubes.
  • In a medium bowl, gently toss the melon balls with fresh lime juice and a drizzle of honey if desired. Allow the melon to marinate for 5 minutes while you prepare the prosciutto.
  • Carefully separate the prosciutto slices and cut each slice in half lengthwise. If your prosciutto slices are particularly large, you may need to cut them into thirds.
  • Wrap each melon ball with a strip of prosciutto, creating a partial covering that allows some of the colorful melon to remain visible. Thread each wrapped melon ball onto a wooden skewer or cocktail pick.
  • Arrange the skewers on a serving platter. Scatter torn mint leaves over the assembled skewers and add a light sprinkle of freshly cracked black pepper.

Notes

For best results, assemble these skewers no more than 2 hours before serving to maintain optimal texture.
For a more elegant presentation, gently fold the prosciutto in pleats as you wrap, creating texture and volume.
Try serving these skewers standing upright in a shallow dish with a small amount of honey-balsamic drizzle for dipping.
