Melon Prosciutto Skewers

- 1 ripe cantaloupe melon honeydew or watermelon also work beautifully
- 8 oz thinly sliced prosciutto about 12-16 slices
- 1 tbsp fresh lime juice
- 1 tbsp honey optional
- 8-10 fresh mint leaves torn or whole for garnish
- freshly cracked black pepper to taste
- 20-24 wooden skewers or cocktail picks
Cut the melon in half and remove all seeds using a spoon. Using a melon baller, scoop out approximately 24 evenly sized melon balls. If you don't have a melon baller, simply cut the melon into 1-inch cubes.
In a medium bowl, gently toss the melon balls with fresh lime juice and a drizzle of honey if desired. Allow the melon to marinate for 5 minutes while you prepare the prosciutto.
Carefully separate the prosciutto slices and cut each slice in half lengthwise. If your prosciutto slices are particularly large, you may need to cut them into thirds.
Wrap each melon ball with a strip of prosciutto, creating a partial covering that allows some of the colorful melon to remain visible. Thread each wrapped melon ball onto a wooden skewer or cocktail pick.
Arrange the skewers on a serving platter. Scatter torn mint leaves over the assembled skewers and add a light sprinkle of freshly cracked black pepper.
For best results, assemble these skewers no more than 2 hours before serving to maintain optimal texture.
For a more elegant presentation, gently fold the prosciutto in pleats as you wrap, creating texture and volume.
Try serving these skewers standing upright in a shallow dish with a small amount of honey-balsamic drizzle for dipping.
