Ingredients
  

  • 4 boneless, skinless chicken breasts approximately 2 pounds
  • 3/4 cup mayonnaise full-fat works best for maximum juiciness
  • 2 cloves garlic minced
  • 1 tbsp fresh lemon juice
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp freshly ground black pepper
  • 2 tbsp freshly grated Parmesan cheese optional

Instructions
 

  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly oil a baking dish.
  • Pat chicken breasts dry with paper towels to ensure the mayonnaise coating adheres properly.
  • In a medium bowl, combine mayonnaise, minced garlic, lemon juice, Italian seasoning, paprika, salt, and pepper. Mix until all ingredients are fully incorporated.
  • If chicken breasts are uneven in thickness, gently pound them to an even thickness of about ¾ inch to ensure uniform cooking.
  • Using a spoon or silicone brush, generously coat each chicken breast with the mayonnaise mixture on all sides.
  • If using Parmesan, sprinkle it evenly over the coated chicken breasts.
  • Place the chicken on the prepared baking sheet or dish, allowing at least 1 inch between pieces for even heat circulation.
  • Bake in the preheated oven for 25-30 minutes, or until the internal temperature reaches 165°F (74°C) when checked with a meat thermometer.
  • Remove chicken from the oven and let it rest for 5 minutes before slicing or serving to allow juices to redistribute throughout the meat.

Notes

Feel free to substitute light mayonnaise if preferred, though results may be slightly less creamy. Greek yogurt can replace up to half the mayonnaise for a tangier flavor. This chicken maintains its moisture even when reheated, making it perfect for meal prep.
