Ingredients
  

Casserole Base

  • 4 cups cooked chicken shredded (rotisserie chicken works wonderfully)
  • 8 oz cream cheese softened
  • 1 cup cottage cheese
  • 1 cup sour cream
  • 1 can cream of chicken soup 10.5 oz
  • 1 packet ranch seasoning mix 1 oz
  • 2 cups shredded cheddar cheese divided

Toppings

  • 6 strips bacon cooked and crumbled
  • 4 green onions thinly sliced
  • 1 sleeve Ritz crackers crushed (about 30 crackers)
  • 4 tablespoons butter melted

Instructions
 

  • Preheat your oven to 350°F (175°C) and lightly grease a 9x13 inch baking dish.
  • In a large mixing bowl, combine the softened cream cheese, cottage cheese, sour cream, cream of chicken soup, and ranch seasoning. Mix until smooth and well incorporated.
  • Fold the shredded chicken into the creamy mixture, ensuring even distribution.
  • Transfer half of the chicken mixture to your prepared baking dish, spreading it evenly. Sprinkle with 1 cup of shredded cheddar cheese.
  • Add the remaining chicken mixture on top of the cheese layer. Sprinkle with the remaining cup of cheddar cheese, followed by the crumbled bacon and green onions.
  • In a small bowl, mix the crushed Ritz crackers with melted butter, then sprinkle this topping evenly over the casserole.
  • Bake uncovered for 30-35 minutes, until the casserole is bubbling around the edges and the topping is golden brown.
  • Allow to rest for 5-10 minutes before serving to let the flavors meld and the texture set properly.

Notes

- For a lighter version, use reduced-fat cream cheese, cottage cheese, and Greek yogurt instead of sour cream
- The casserole can be made up to 24 hours in advance and refrigerated before baking
