Base Ingredients
- 8 large flour tortillas 10-inch diameter
- 16 oz cream cheese softened
- 1 packet ranch seasoning mix
- 1 cup shredded cheddar cheese finely shredded
- 1/2 cup crispy bacon bits about 8 slices, cooked and crumbled
Vegetables
- 1/4 cup green onions thinly sliced
- 1/4 cup red bell pepper diced
- 1/4 cup green bell pepper diced
- 2 tbsp fresh dill chopped (optional)
In a medium bowl, blend the softened cream cheese until smooth. Add the ranch seasoning mix and stir until completely incorporated.
Fold in the shredded cheddar cheese, bacon bits, green onions, and diced bell peppers until evenly distributed. If using fresh dill, add it now.
Lay a tortilla flat on a clean work surface. Spread approximately 3-4 tablespoons of the cream cheese mixture evenly over the entire surface, leaving a 1/2-inch border around the edges.
Tightly roll the tortilla from one end to create a compact log. Wrap each rolled tortilla in plastic wrap, twisting the ends to secure.
Place the wrapped rolls in the refrigerator for at least 2 hours or overnight.
Remove the plastic wrap and use a sharp knife to slice each roll into 1-inch thick pinwheels. For the cleanest cuts, wipe your knife between slices. Arrange on a serving platter.
For a lighter version, use Neufchâtel cheese or Greek yogurt cream cheese instead of regular cream cheese.
Unsliced rolls will keep in the refrigerator for up to 3 days when tightly wrapped.
Sliced pinwheels are best consumed within 24 hours for optimal texture.
For make-ahead convenience, prepare and freeze unsliced rolls for up to 1 month; thaw overnight in the refrigerator before slicing.
