Ingredients
  

For the crust

  • 1 pre-made graham cracker crust 9-inch

For the filling

  • 1 can sweetened condensed milk 14 oz, chilled
  • 1/4 cup fresh lemon juice
  • 1 can crushed pineapple 8 oz, thoroughly drained
  • 1 cup sweetened shredded coconut
  • 1/2 cup chopped pecans lightly toasted
  • 1/3 cup maraschino cherries drained and chopped (reserve some whole for garnish)
  • 1 container whipped topping 8 oz, thawed

Instructions
 

  • Place the crushed pineapple in a fine-mesh strainer and press firmly with the back of a spoon to remove excess moisture. Let it drain while you prepare other ingredients.
  • In a large mixing bowl, combine the sweetened condensed milk and lemon juice. Stir until the mixture begins to thicken slightly, about 1 minute.
  • Fold in the well-drained pineapple, shredded coconut, chopped pecans, and chopped maraschino cherries. Mix gently until evenly distributed.
  • Carefully fold in the whipped topping using a rubber spatula, maintaining a light and airy texture. Use a gentle over-and-under motion rather than stirring to preserve the volume.
  • Pour the mixture into the graham cracker crust and smooth the top with a spatula. Create decorative swirls if desired.
  • Cover with the plastic lid that comes with the crust (or plastic wrap) and refrigerate for at least 4 hours, preferably overnight.
  • Garnish with additional cherries before serving if desired.

Notes

For best results, ensure all ingredients are properly chilled before mixing.
The pie can be stored covered in the refrigerator for up to 4 days.
For a homemade graham cracker crust, combine 1½ cups graham cracker crumbs with ⅓ cup melted butter, press into a pie plate, and chill before filling.
You can substitute the whipped topping with 2 cups homemade whipped cream (whip 1 cup heavy cream with 2 tablespoons powdered sugar).
