For Fruit Skewers

- 1 cup watermelon cubed
- 2 kiwis peeled and quartered
- 1 cup green grapes
- 1 tbsp fresh lime juice for drizzling
- 1 tbsp honey optional
- mint leaves for garnish
For Seafood Skewers
- 1 pound medium shrimp peeled and deveined
- 1/2 pound bay scallops
- 1 lemon juiced
- 2 tbsp olive oil
- 2 cloves garlic minced
- 1 tsp dried oregano
- 1/2 tsp smoked paprika

- cherry tomatoes for alternating
- cucumber chunks for alternating
Thoroughly wash all fruits and vegetables. Pat your seafood dry with paper towels to ensure proper seasoning adhesion and cooking.
Combine lemon juice, olive oil, garlic, oregano, paprika, salt, and pepper in a bowl. Toss your shrimp and scallops in this mixture, ensuring each piece is well-coated. Allow to marinate for 30 minutes in the refrigerator.
Thread fruits onto small wooden skewers in an appealing pattern, alternating colors for visual appeal. For each skewer, try combining grape, strawberry, pineapple, kiwi, and watermelon. Leave a small space at the bottom for easy handling.
Heat a grill pan or outdoor grill to medium-high heat. Remove seafood from marinade and thread onto skewers, alternating with cherry tomatoes and cucumber pieces.
Cook seafood skewers for approximately 2 minutes per side until shrimp turns pink and scallops become opaque.
Drizzle fruit skewers with lime juice and optional honey. For seafood skewers, add a final sprinkle of sea salt to elevate the flavors.
Arrange skewers on a serving platter with separate sections for fruit and seafood options, garnish fruit skewers with mint leaves if desired.
Fruit skewers can be assembled up to 4 hours ahead and stored covered in the refrigerator. Seafood should be marinated ahead but skewered and cooked no more than 30 minutes before serving for optimal texture and food safety.
For wooden skewers, soak in water for at least 30 minutes before using to prevent burning. For an even better result, soak fruit skewers in apple juice or seafood skewers in white wine for subtle flavor enhancement.
Fruit substitution options: Cantaloupe for watermelon, blueberries for grapes, or mango for pineapple. For a sugar-free version, omit the honey.
Seafood substitution options: Use pre-cooked shrimp to save time, swap scallops with firm white fish chunks, or try cooked octopus pieces.
