Ingredients
  

Graham Cracker Base

  • 1 cup graham cracker crumbs about 7-8 graham crackers
  • 2 tbsp butter melted

Cheesecake Mixture

  • 8 oz cream cheese softened, room temperature
  • 1 cup powdered sugar sifted
  • 1 tsp vanilla extract pure, not imitation
  • 1 cup heavy whipping cream whipped to stiff peaks

Mix-ins and Toppings

  • 2 cups mixed fresh berries strawberries, blueberries, raspberries
  • 1 cup mini marshmallows

Instructions
 

  • In a medium bowl, combine graham cracker crumbs with melted butter until the mixture resembles wet sand. Press firmly into the bottom of your serving dish or individual cups.
  • In a large, chilled mixing bowl, whip the heavy cream until stiff peaks form, about 3-4 minutes with an electric mixer on medium-high speed.
  • In a separate bowl, beat the softened cream cheese until smooth and fluffy, about 2 minutes. Add the powdered sugar and vanilla extract, continuing to beat until well combined and smooth.
  • Gently fold the whipped cream into the cream cheese mixture using a spatula with a light hand. Continue until just combined, maintaining as much air as possible.
  • Carefully fold in the mini marshmallows and about 3/4 of the berries, reserving some for garnish. Distribute the mixture evenly over your graham cracker base.
  • Refrigerate for at least 2 hours or overnight. Before serving, top with the remaining fresh berries.

Notes

For best results, ensure your cream cheese is at room temperature before mixing to avoid lumps in your cheesecake fluff.
Pat berries dry before adding them to prevent excess moisture from making your dessert runny.
This dessert can be stored covered in the refrigerator for up to 3 days, though the texture is best within the first 24-48 hours.
