Ingredients
  

For the crust

  • 2 cups graham cracker crumbs about 14 full sheets
  • 1/3 cup unsalted butter melted
  • 3 tablespoons granulated sugar

For the cream layer

  • 16 oz cream cheese softened (substitute Neufchâtel for a lighter option)
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups heavy whipping cream can use light whipping cream for fewer calories

For the peach layer

  • 6 ripe peaches sliced thinly (about 4 cups; can substitute 2 cans drained peaches when fresh aren't available)
  • 3 tablespoons granulated sugar
  • 1 tablespoon lemon juice
  • 1/2 teaspoon cinnamon optional for enhanced flavor

For garnish

  • 1/2 cup crushed graham crackers
  • fresh mint leaves
  • extra peach slices

Instructions
 

  • In a medium bowl, combine graham cracker crumbs, melted butter, and sugar until the mixture resembles wet sand. Press firmly into the bottom of a 9x13 inch dish, creating an even layer. The back of a flat measuring cup works perfectly for getting that professional, even press. Place in refrigerator while preparing the next layers.
  • In a large mixing bowl, beat cream cheese until fluffy, about 2 minutes. Add powdered sugar and vanilla extract, mixing until smooth. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture, being careful not to deflate the air you've whipped in.
  • Combine sliced peaches with sugar, lemon juice, and cinnamon (if using) in a bowl. Let sit for 10 minutes to allow flavors to meld and natural peach juices to release.
  • Spread half of the cream mixture over the chilled crust, ensuring an even layer that reaches all edges. Arrange half of the peach slices over the cream in a decorative pattern. Repeat with remaining cream and peaches, creating beautiful, defined layers.
  • Sprinkle the top with crushed graham crackers for textural contrast and visual appeal. Cover carefully with plastic wrap and refrigerate for at least 4 hours, though overnight refrigeration yields the best flavor development.
  • When ready to serve, garnish with fresh mint leaves and extra peach slices if desired. Cut into squares and enjoy chilled.

Notes

For best results, use ripe but firm peaches. If peaches are too soft, they may release too much juice and make the dessert soggy.
To make ahead, prepare crust and cream layers up to 2 days ahead, adding peaches just before serving.
Store covered in refrigerator for up to 3 days. This dessert is not suitable for freezing.
