Ingredients
  

For the casserole base

  • 2 cups uncooked long-grain white rice
  • 1 can cream of mushroom soup (10.5 oz)
  • 1 can cream of chicken soup (10.5 oz)
  • 2 cups chicken broth low-sodium recommended
  • 1 tablespoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 2 pounds boneless, skinless chicken breasts or thighs

For topping (optional)

  • 1 cup shredded cheddar cheese
  • 2 tablespoons fresh parsley chopped

Instructions
 

  • Preheat your oven to 350°F (175°C). Lightly coat a 9x13 inch baking dish with cooking spray or butter.
  • In a large mixing bowl, combine the uncooked rice, cream of mushroom soup, cream of chicken soup, chicken broth, onion powder, garlic powder, dried thyme, and black pepper. Stir until thoroughly combined.
  • Pour the rice mixture into your prepared baking dish, spreading it evenly. Give the dish a gentle shake to ensure the mixture settles evenly.
  • Place the chicken pieces on top of the rice mixture, ensuring they don't overlap too much. Slightly press them into the mixture, but don't submerge them completely.
  • Cover the baking dish tightly with aluminum foil. Place in the preheated oven and bake for 1 hour and 30 minutes. DO NOT OPEN THE OVEN during this time.
  • After the cooking time is complete, remove the foil. If using cheese, sprinkle it over the top and return to the oven, uncovered, for an additional 15 minutes until the cheese is melted and bubbly. The internal temperature of the chicken should reach 165°F (74°C).
  • Allow the casserole to rest for 5-10 minutes before serving. Garnish with fresh parsley if desired, and serve hot.

Notes

For a healthier version, you can use brown rice (add 15 minutes to cooking time), reduce-sodium soups and broth, or add vegetables like frozen peas and carrots.
Store leftovers in an airtight container for up to 4 days in the refrigerator or freeze for up to 3 months.
The most important rule is not to peek during cooking, as opening the oven door releases heat and steam, which can result in undercooked rice.
