  • 2 medium apples preferably Honeycrisp or Granny Smith, diced into ½-inch cubes
  • 1 large yellow onion thinly sliced
  • 2 cloves garlic minced
  • 2 tablespoons olive oil divided
  • 1 teaspoon dried sage
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • salt and freshly ground black pepper to taste
  • 2 tablespoons fresh parsley chopped, for garnish
  • 2 eggs optional, for topping

  • Wash and dice your apples—no need to peel them, as the skin adds texture and nutrition. Slice your onion thinly for faster caramelization. Have all ingredients prepped and within reach, as this recipe moves quickly once you start cooking.
  • Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced onions with a pinch of salt and cook for 5-7 minutes, stirring occasionally, until they become translucent and begin to caramelize.
  • Once onions are softened, add the diced apples to the pan. Cook for 3-4 minutes until the apples begin to soften but still maintain some firmness.
  • Push the apple-onion mixture to one side of the pan and add the remaining tablespoon of olive oil to the empty side. Add the minced garlic and cook for 30 seconds until fragrant. Add the ground turkey, breaking it apart with a wooden spoon. Season with sage, thyme, smoked paprika, salt, and pepper. Cook for 5-7 minutes until the turkey is no longer pink.
  • Mix everything together in the pan, allowing the flavors to meld for 2-3 minutes. Taste and adjust seasonings as needed. For a restaurant-quality presentation, make two small wells in the hash and crack an egg into each if desired. Cover the pan and cook for another 3-4 minutes until eggs reach your preferred doneness.
  • Sprinkle fresh parsley over the top just before serving. The bright green color and fresh flavor will elevate the entire dish and provide a pleasant contrast to the caramelized elements.

- For a lower fat version, use 99% lean ground turkey breast and reduce olive oil to 1 tablespoon total.
