Ingredients
  

Peach Mixture

  • 3 ripe peaches diced (about 2 cups)
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon

Yogurt Base

  • 2 cups Greek yogurt vanilla or plain
  • 1 tablespoon honey or maple syrup

Crisp Topping

  • 1 cup granola preferably with oats and nuts
  • 2 tablespoons melted coconut oil
  • 1 tablespoon brown sugar or coconut sugar

Instructions
 

  • In a small saucepan, combine the diced peaches, 1 tablespoon of honey or maple syrup, vanilla extract, and cinnamon. Heat over medium-low for 5-7 minutes, just until peaches slightly soften and release their juices. Remove from heat and let cool completely.
  • In a medium bowl, combine the Greek yogurt with the remaining tablespoon of honey or maple syrup. Stir until smooth and well incorporated.
  • In a small bowl, mix the granola with melted coconut oil and brown sugar until evenly coated.
  • Take your popsicle molds and begin layering: Start with 1-2 tablespoons of the peach mixture, followed by 2 tablespoons of the yogurt mixture, then 1 tablespoon of the crisp topping. Repeat layers until molds are filled, ending with the crisp topping. Tap the molds gently on the counter between layers to eliminate air pockets.
  • Insert popsicle sticks and freeze for a minimum of 6 hours, preferably overnight.
  • When ready to serve, run the outside of the molds under warm water for 20-30 seconds to release the pops easily. For best texture and flavor experience, let the pops sit at room temperature for 2-3 minutes before enjoying.

Notes

For a lower-sugar version, use unsweetened Greek yogurt and rely on the natural sweetness of fully ripened peaches.
These parfait pops will maintain optimal flavor and texture for up to 2 weeks when properly stored in the freezer. After removing from molds, wrap each pop individually in wax paper and store together in an airtight container or freezer bag.
If you don't have popsicle molds, you can use small paper cups. Fill with your layers, cover the top with aluminum foil, poke a popsicle stick through the center, and freeze as directed.
