Fresh Ingredients
- 4 ripe peaches diced (about 3 cups)
- 1/2 red onion finely diced (about 1/2 cup)
- 1 red bell pepper seeded and finely diced
- 1-2 jalapeños seeds removed and minced
- 1/3 cup fresh cilantro leaves roughly chopped
Seasonings & Liquids
- 2 tbsp fresh lime juice approximately 1-2 limes
- 1 tbsp honey or agave nectar optional for additional sweetness
- 1/2 tsp salt
- 1/4 tsp ground cumin
- 1/8 tsp freshly ground black pepper
Wash peaches thoroughly and pat dry. Cut around the pit and twist the halves apart. Remove pits and dice peaches into approximately 1/4-inch pieces. Leave skins on for added color and nutrition.
Finely dice the red onion and bell pepper to approximately the same size as your peach pieces. For the jalapeños, carefully remove the seeds and white membrane before mincing.
In a medium mixing bowl, gently combine the diced peaches, red onion, bell pepper, jalapeño, and chopped cilantro. Toss with care to preserve the texture of the peaches.
Drizzle with fresh lime juice, add salt, pepper, and ground cumin. If using, incorporate the honey or agave nectar.
Gently toss all ingredients until well combined. For best results, cover and refrigerate for 30 minutes before serving, allowing the flavors to develop.
For a lower-sugar version, omit the honey and select slightly underripe peaches.
Create a tropical variation by substituting half the peaches with diced pineapple.
Store in an airtight glass container in the refrigerator for up to 3 days.
If you don't like cilantro, substitute with fresh mint, basil, or flat-leaf parsley.
