Ingredients

  • 4 ripe peaches diced (about 3 cups)
  • 1/2 red onion finely diced (about 1/2 cup)
  • 1 red bell pepper seeded and finely diced
  • 1-2 jalapeños seeds removed and minced
  • 1/3 cup fresh cilantro leaves roughly chopped

Seasonings & Liquids

  • 2 tbsp fresh lime juice approximately 1-2 limes
  • 1 tbsp honey or agave nectar optional for additional sweetness
  • 1/2 tsp salt
  • 1/4 tsp ground cumin
  • 1/8 tsp freshly ground black pepper

Instructions
 

  • Wash peaches thoroughly and pat dry. Cut around the pit and twist the halves apart. Remove pits and dice peaches into approximately 1/4-inch pieces. Leave skins on for added color and nutrition.
  • Finely dice the red onion and bell pepper to approximately the same size as your peach pieces. For the jalapeños, carefully remove the seeds and white membrane before mincing.
  • In a medium mixing bowl, gently combine the diced peaches, red onion, bell pepper, jalapeño, and chopped cilantro. Toss with care to preserve the texture of the peaches.
  • Drizzle with fresh lime juice, add salt, pepper, and ground cumin. If using, incorporate the honey or agave nectar.
  • Gently toss all ingredients until well combined. For best results, cover and refrigerate for 30 minutes before serving, allowing the flavors to develop.

Notes

For a lower-sugar version, omit the honey and select slightly underripe peaches.
Create a tropical variation by substituting half the peaches with diced pineapple.
Store in an airtight glass container in the refrigerator for up to 3 days.
If you don't like cilantro, substitute with fresh mint, basil, or flat-leaf parsley.
