Ingredients
  

Peppers & Cheese

  • 24 peppadew peppers drained (mild or hot, depending on preference)
  • 8 oz sharp cheddar cheese freshly grated
  • 4 oz cream cheese softened
  • 1/4 cup mayonnaise Duke's recommended for authentic Southern flavor
  • 2 oz diced pimientos drained

Seasonings

  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/8 tsp cayenne pepper optional
  • salt and black pepper to taste
  • 1 tbsp fresh chives finely chopped, for garnish

Instructions
 

  • Drain the peppadew peppers thoroughly by placing them upside down on paper towels. For better stability, trim a tiny slice from the bottom of each pepper so they stand upright on your serving platter.
  • In a medium bowl, combine the softened cream cheese and mayonnaise until completely smooth.
  • Fold in the grated cheddar cheese, drained pimientos, garlic powder, onion powder, and cayenne (if using). Season with salt and black pepper to taste.
  • Transfer the pimiento cheese mixture to a piping bag fitted with a star tip or use a small spoon to fill each pepper, slightly overfilling each one for a decorative presentation.
  • Refrigerate the stuffed peppers for at least 30 minutes to allow flavors to meld.
  • Before serving, sprinkle with finely chopped fresh chives for garnish.

Notes

For a lighter version, substitute Greek yogurt for mayonnaise.
Use freshly grated cheese rather than pre-shredded for better texture and flavor.
These can be prepared up to 2 days in advance, though they're best within 24 hours of assembly.
The pimiento cheese filling alone can be made up to 5 days ahead of time.
If peppadew peppers aren't available, sweet mini bell peppers work as an alternative.
