  • 3/4 cup powdered sugar

Instructions
 

  • Drain the crushed pineapple thoroughly by placing it in a fine-mesh sieve and pressing with the back of a spoon to remove excess moisture. For optimal texture, pat the pineapple with paper towels to eliminate any remaining liquid.
  • In a large mixing bowl, beat the softened cream cheese until completely smooth and fluffy, about 2-3 minutes.
  • Add powdered sugar, vanilla extract, and almond extract (if using) to the cream cheese. Beat until completely incorporated and the mixture is silky smooth.
  • Fold in the well-drained pineapple using a rubber spatula, distributing it evenly throughout the cream cheese mixture.
  • Gently fold in the whipped heavy cream using a spatula, maintaining as much air as possible for a light, fluffy texture.
  • Fold in the crystallized ginger if using, or reserve some to sprinkle on top as a garnish.
  • Transfer the dip to a serving bowl and refrigerate for at least 2 hours to allow flavors to meld and the dip to firm up to the perfect consistency.
  • Serve chilled with graham crackers, vanilla wafers, or fresh fruit for dipping.

Notes

For a lighter version, substitute Neufchâtel cheese or light cream cheese for regular cream cheese.
Greek yogurt can replace half the cream cheese for added tanginess and protein.
Fresh pineapple finely diced works in place of canned, though you'll need to add 1-2 tablespoons of sugar.
The dip keeps in an airtight container in the refrigerator for up to 4 days.
