Ingredients
  

  • 2 cups fresh pineapple chunks sweet and ripe
  • 1 cup freshly squeezed lemon juice approximately 6-8 medium lemons
  • 4-5 tablespoons honey or maple syrup adjust to taste
  • 6 cups cold water
  • ice cubes for serving
  • fresh mint leaves for garnish (optional)
  • lemon slices for garnish (optional)

Instructions
 

  • Peel and core your fresh pineapple, then cut it into chunks. Aim for pieces about 1-inch in size to ensure they blend smoothly.
  • Roll each lemon firmly on the countertop before cutting to release more juice. Then, cut in half and squeeze using a citrus reamer or juicer. Strain the juice to remove seeds and excessive pulp.
  • Place pineapple chunks in a blender and process until completely smooth, about 30-45 seconds. For an ultra-smooth texture, strain the puree through a fine-mesh sieve, pressing with a spoon to extract all the juice.
  • In a large pitcher, combine the pineapple puree, fresh lemon juice, and your chosen sweetener. Stir until the sweetener is completely dissolved.
  • Add cold water to the pitcher and stir thoroughly. Taste and adjust sweetness if necessary.
  • Refrigerate for at least an hour to allow flavors to meld, though you can serve immediately over ice if desired.
  • Pour into glasses filled with ice. Garnish with fresh mint leaves and lemon slices before serving.

Notes

For a fizzy variation, substitute half the water with sparkling water when serving.
If your pineapple isn't quite ripe enough, place it upside down on the counter for 24 hours before using to help concentrate the sweetness.
For a sugar-free version, use a natural sweetener like stevia or monk fruit instead of honey or maple syrup.
Add a splash of coconut rum for an adults-only version.
