Ingredients
  

For the Pizza Bites

  • 2 cups all-purpose flour or whole wheat flour for a healthier alternative
  • 1 package active dry yeast 2¼ teaspoons
  • 1 tsp sugar
  • 3/4 cup warm water 110-115°F
  • 2 tbsp olive oil plus extra for brushing
  • 1 tsp salt
  • 1 cup pizza sauce store-bought or homemade
  • 2 cups mozzarella cheese shredded
  • 1/2 cup mini pepperoni slices substitute with diced bell peppers for vegetarian option
  • 1 tsp Italian seasoning

For Lunch Box Accompaniments

  • 1 cup cherry tomatoes
  • 1/2 cucumber sliced
  • 1/4 cup olives optional
  • ranch dressing or marinara sauce for dipping
  • fresh fruit of choice grapes, apple slices, or berries work well

Instructions
 

  • In a large bowl, combine the warm water, sugar, and yeast. Let it sit for about 5 minutes until it becomes frothy and activated.
  • Add the flour, salt, and olive oil to the yeast mixture. Mix until a soft dough forms, then turn onto a floured surface and knead for 5-7 minutes until smooth and elastic.
  • Place the dough in an oiled bowl, cover with a damp cloth, and let rise in a warm place for about 30 minutes or until doubled in size. While waiting, prepare your toppings and preheat your oven to 400°F (200°C).
  • Once risen, punch down the dough and divide it into 24 equal pieces. Roll each piece into a ball, then flatten slightly. Place a small amount of pizza sauce, cheese, and pepperoni (or other toppings) in the center of each flattened dough piece.
  • Carefully fold the edges up and over the filling, pinching to seal completely. Place seam-side down on a parchment-lined baking sheet.
  • Brush the tops of the pizza bites with olive oil and sprinkle with Italian seasoning. Bake for 12-15 minutes until golden brown and cooked through.
  • Let cool completely before packing in lunch boxes with desired accompaniments.

  • Refrigerate cooled pizza bites in an airtight container for up to 3 days
  • Freeze fully cooled bites on a baking sheet until solid, then transfer to a freezer bag for up to 1 month
  • Thaw overnight in the refrigerator before packing in lunch boxes
  • For best texture, avoid microwaving frozen bites – instead, thaw and then briefly heat in a toaster oven if serving warm
  • Don't overfill the dough - 2 teaspoons of filling is the perfect amount
