- 1 package instant vanilla pudding mix 3.4 oz
- 1 tsp pumpkin pie spice
- 1/2 tsp cinnamon
- 1 container frozen whipped topping 8 oz, thawed
- 1/4 tsp vanilla extract optional
Combine the pumpkin puree and instant pudding mix in a large mixing bowl. Whisk thoroughly until completely combined and no dry pudding particles remain. For best results, use an electric mixer on low speed for 1-2 minutes to ensure a smooth, lump-free base.
Sprinkle the pumpkin pie spice and cinnamon over your pumpkin-pudding mixture. Blend the spices in completely to ensure even distribution throughout the mixture.
Add the thawed whipped topping to your spiced pumpkin mixture. Using a rubber spatula, gently fold the ingredients together until no white streaks remain.
If using vanilla extract, add it now and fold once more to incorporate. Transfer your pumpkin fluff to a serving bowl, cover, and refrigerate for at least one hour (though 2+ hours is preferred for optimal flavor development).
For a lighter version, use sugar-free pudding mix and light whipped topping. For a dairy-free option, use dairy-free pudding mix and coconut whipped cream. You can make your own pumpkin pie spice with 1/2 tsp cinnamon, 1/4 tsp ginger, 1/8 tsp nutmeg, and a pinch of cloves.
Store in an airtight container in the refrigerator for up to 3 days. Not suitable for freezing as it will affect the texture.
