For the Caramel

  • 2 tablespoons heavy cream

  • 1/2 teaspoon pure vanilla extract

Instructions
 

  • Remove stems and thoroughly wash apples with the vinegar solution to eliminate any wax residue. Dry completely with paper towels – this is crucial as any moisture will prevent the caramel from adhering properly.
  • Push wooden sticks firmly into the top center of each apple, inserting about halfway through. For extra stability, refrigerate the apples for 30 minutes before dipping.
  • Line a baking sheet with parchment paper and spray lightly with cooking spray. Arrange your chosen toppings in small bowls for easy access.
  • In a medium saucepan over low heat, combine caramels, heavy cream, and butter. Stir constantly until completely melted and smooth (approximately 5-7 minutes). Remove from heat and stir in pumpkin pie spice, vanilla extract, and salt until well combined.
  • Working quickly with one apple at a time, hold by the stick and dip into the pumpkin spice caramel mixture, rotating to coat evenly. Allow excess caramel to drip off for 15-20 seconds. Use a spoon to help coat difficult spots near the stick.
  • Immediately after dipping each apple, roll or sprinkle with your chosen toppings while the caramel is still sticky. For a professional look, dip only the bottom half in toppings and drizzle the top with contrasting chocolate.
  • Place decorated apples on the prepared parchment paper and refrigerate for at least 45 minutes to set completely. For a firmer set that's easier to slice, chill for up to 2 hours.
