Salad Ingredients
- 4 medium-sized ripe tomatoes preferably heirloom varieties
- 2 medium shallots thinly sliced (about ¼ cup)
- 2 tablespoons fresh herbs chopped basil or parsley
Dressing
- 2 tablespoons whole grain mustard
- 2 tablespoons extra virgin olive oil
- 1 tablespoon white wine vinegar
- 1 teaspoon honey optional, for balanced sweetness
- salt and freshly ground black pepper to taste
Slice tomatoes into ¼-inch thick rounds or wedges, depending on your preference. Allow tomatoes to reach room temperature before slicing for best flavor.
In a small bowl, whisk together the whole grain mustard, olive oil, white wine vinegar, and honey (if using) until emulsified.
Peel and slice the shallots as thinly as possible. If shallots seem too pungent, place them in cold water for 5 minutes before draining and drying.
Arrange the tomato slices on a serving platter. Scatter the shallots evenly over the tomatoes, then drizzle with the prepared dressing. Season generously with salt and freshly ground black pepper.
Sprinkle with freshly chopped herbs and allow the salad to rest for 10 minutes before serving.
