- 1 pound breakfast sausage links pork, chicken, or turkey (450g)
- 3 large apples Honeycrisp, Gala, or Granny Smith, cored and cut into 1-inch chunks
- 2 medium sweet potatoes peeled and diced into 1-inch cubes
- 1 large red onion roughly chopped
- 3 tablespoons olive oil
- 2 tablespoons maple syrup optional, or honey
- 1 tablespoon fresh rosemary chopped (or 1 teaspoon dried)
- 2 teaspoons fresh thyme leaves or 1/2 teaspoon dried
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- salt and freshly ground black pepper to taste
- 2 tablespoons apple cider vinegar
Preheat your oven to 400°F (200°C).
If using larger sausage links, slice them into 1-inch pieces. For breakfast-sized links, leave them whole. For enhanced flavor, you can quickly brown the sausages in a skillet for 2-3 minutes before adding to the sheet pan.
In a large bowl, combine the apple chunks, diced sweet potatoes, and chopped red onion.
In a small bowl, whisk together the olive oil, maple syrup, rosemary, thyme, cinnamon, nutmeg, salt, and pepper.
Pour the seasoning mixture over the apple and vegetable mix and toss until everything is evenly coated.
Spread the seasoned mixture evenly on a large rimmed baking sheet. Add the sausage pieces, nestling them among the fruits and vegetables. Ensure everything is in a single layer with a bit of space between pieces for even cooking.
Bake in the preheated oven for 20 minutes, then remove and carefully stir everything to ensure even cooking.
Return to the oven for another 15-20 minutes, until the sausage is fully cooked, and the sweet potatoes and apples are tender and caramelized at the edges.
Once removed from the oven, drizzle the apple cider vinegar over the hot sheet pan.
For a lower-fat version, substitute turkey or chicken sausage for pork sausage.
Sweet potatoes can be replaced with regular potatoes or butternut squash.
For a spicier kick, add 1/4 teaspoon of cayenne pepper or use spicy sausage.
Vegans can substitute plant-based sausages and maple syrup for honey.
Store leftovers in airtight containers for up to 4 days in the refrigerator or freeze for up to 2 months.
For best results when reheating, use a 350°F oven for 10-15 minutes rather than microwaving.
