- 1 pound smoked sausage or kielbasa sliced into 1-inch pieces (4-5 links)
- 3 medium apples Honeycrisp, Gala, or Braeburn, cored and cut into 1-inch chunks
- 2 medium red onions cut into 1-inch chunks
- 2 tablespoons olive oil
- 1 tablespoon maple syrup optional
- 1 tablespoon whole grain mustard
- 1 teaspoon fresh thyme leaves or ½ teaspoon dried
- 1 teaspoon fresh rosemary chopped, or ½ teaspoon dried
- 1/2 teaspoon garlic powder
- salt and pepper to taste
Preheat your oven to 425°F (220°C). Line a large rimmed baking sheet with parchment paper for easy cleanup.
Slice your sausage into 1-inch pieces. Core and cut apples into 1-inch chunks, leaving the skin on. Cut the red onions into chunks roughly the same size as your apples.
In a small bowl, whisk together the olive oil, maple syrup (if using), whole grain mustard, thyme, rosemary, garlic powder, salt, and pepper.
Place the sausage, apples, and onions on your prepared baking sheet. Pour the seasoning mixture over everything and toss until evenly coated. Spread everything in a single layer, ensuring there's space between pieces.
Roast in your preheated oven for 20-25 minutes, stirring halfway through. Look for caramelized, golden edges on the apples, slightly crisp sausage, and tender onions. For more color, broil for the final 2 minutes, watching carefully.
For a healthier version, use chicken or turkey sausage instead of pork sausage.
Add vegetables like brussels sprouts or broccoli for extra nutrition.
Make sure not to overcrowd the pan - use two pans if necessary for proper caramelization.
Leftovers can be stored in an airtight container for up to 3 days in the refrigerator.
Reheat at 350°F for 10 minutes to maintain texture.
