Ingredients
  

  • 1 pound smoked sausage or kielbasa sliced into 1-inch pieces (4-5 links)
  • 3 medium apples Honeycrisp, Gala, or Braeburn, cored and cut into 1-inch chunks
  • 2 medium red onions cut into 1-inch chunks
  • 2 tablespoons olive oil
  • 1 tablespoon maple syrup optional
  • 1 tablespoon whole grain mustard
  • 1 teaspoon fresh thyme leaves or ½ teaspoon dried
  • 1 teaspoon fresh rosemary chopped, or ½ teaspoon dried
  • 1/2 teaspoon garlic powder
  • salt and pepper to taste

Instructions
 

  • Preheat your oven to 425°F (220°C). Line a large rimmed baking sheet with parchment paper for easy cleanup.
  • Slice your sausage into 1-inch pieces. Core and cut apples into 1-inch chunks, leaving the skin on. Cut the red onions into chunks roughly the same size as your apples.
  • In a small bowl, whisk together the olive oil, maple syrup (if using), whole grain mustard, thyme, rosemary, garlic powder, salt, and pepper.
  • Place the sausage, apples, and onions on your prepared baking sheet. Pour the seasoning mixture over everything and toss until evenly coated. Spread everything in a single layer, ensuring there's space between pieces.
  • Roast in your preheated oven for 20-25 minutes, stirring halfway through. Look for caramelized, golden edges on the apples, slightly crisp sausage, and tender onions. For more color, broil for the final 2 minutes, watching carefully.

Notes

For a healthier version, use chicken or turkey sausage instead of pork sausage.
Add vegetables like brussels sprouts or broccoli for extra nutrition.
Make sure not to overcrowd the pan - use two pans if necessary for proper caramelization.
Leftovers can be stored in an airtight container for up to 3 days in the refrigerator.
