Ingredients
  

For the Base

  • 6 medium Granny Smith apples firm and tart
  • 14 oz soft caramels unwrapped
  • 2 tablespoons heavy cream
  • 6 wooden popsicle sticks or sturdy lollipop sticks

For the S'mores Coating

  • 2 cups semi-sweet chocolate chips
  • 2 tablespoons coconut oil helps chocolate set with a shine
  • 1 1/2 cups mini marshmallows
  • 1 1/2 cups graham cracker crumbs about 10 full crackers, crushed
  • 1/4 cup milk chocolate chips for drizzling

Instructions
 

  • Thoroughly wash and dry your apples, as any moisture will prevent the caramel from adhering properly. Remove stems and insert wooden sticks firmly into the apple cores, pushing about halfway through for stability. Chill the apples in the refrigerator for 15 minutes.
  • Line a baking sheet with parchment paper and spray lightly with cooking spray. Set out small bowls containing your graham cracker crumbs and mini marshmallows.
  • In a medium microwave-safe bowl, combine the unwrapped caramels and heavy cream. Microwave in 30-second intervals, stirring between each interval, until completely melted and smooth (approximately 2-3 minutes total).
  • Working quickly, dip each apple into the melted caramel, rotating to coat evenly. Allow excess caramel to drip off, then place on your prepared baking sheet. If the caramel begins to thicken, reheat for 15 seconds and stir before continuing.
  • While the caramel is still warm but not hot, roll the bottom third of each apple in graham cracker crumbs, pressing gently to adhere. Place back on the parchment paper and refrigerate for 15 minutes to set this layer.
  • In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until fully melted and smooth (approximately 1-2 minutes).
  • Dip each caramel-coated apple into the melted chocolate, covering about two-thirds of the apple. While the chocolate is still wet, press mini marshmallows onto the top portion and add additional graham cracker crumbs to bare spots if desired.
  • For the authentic s'mores experience, use a kitchen torch to lightly toast the marshmallows until golden brown (optional).
  • Melt the milk chocolate chips in a small bag with the corner snipped off or a piping bag, then drizzle over the apples for that finishing touch. Allow to set completely before serving.

Notes

- Use a paper towel with a touch of lemon juice or vinegar to wipe the apples after washing to remove any wax coating.
- For best results, tilt the bowl slightly while rotating the apple for the most even caramel coating.
- Store in the refrigerator for up to 3 days in airtight containers or wrapped individually in parchment paper.
- For best texture, remove from refrigerator 15-20 minutes before serving.
- If making ahead, consider waiting to add the marshmallow topping until just before serving.
- These do not freeze well due to texture changes in the apple and toppings.
