Ingredients
  

Base Ingredients

  • 2 cups apple juice or unfiltered apple cider high-quality
  • 1 cup cranberry juice 100% juice, not cocktail
  • 2 cups sparkling water or club soda
  • 1/4 cup fresh lemon juice approximately 2 lemons
  • 1 tbsp honey or maple syrup adjust to taste

  • 3 cinnamon sticks
  • 4 whole cloves
  • 2 star anise pods

Garnishes

Instructions
 

  • In a medium saucepan, combine the apple juice, cranberry juice, cinnamon sticks, cloves, and star anise. Heat over medium-low heat until it just begins to simmer (about 5 minutes). Avoid boiling as this can make the juice cloudy and diminish the fresh flavor.
  • Once simmering, remove from heat and stir in the honey or maple syrup until completely dissolved. Taste and adjust sweetness according to your preference.
  • Allow the spiced juice mixture to cool to room temperature, about 15-20 minutes. This cooling period allows the spices to further infuse the juices.
  • Strain the mixture through a fine mesh sieve into a pitcher to remove the whole spices. If time permits, refrigerate until thoroughly chilled (about 30 minutes).
  • Just before serving, stir in the fresh lemon juice and sparkling water. Add the sparkling water gradually while gently stirring to preserve as much carbonation as possible.
  • Pour the mocktail over ice-filled glasses. Garnish each glass with fresh apple slices, a few floating cranberries, and a sprig of rosemary if desired. For an extra special touch, slightly bruise the rosemary sprig between your fingers before adding it to release more of its aromatic oils.
