Ingredients
  

  • 1 cup strongly brewed coffee or 2 shots espresso
  • 3/4 cup milk whole, almond, oat, or coconut
  • 2 tablespoons pure pumpkin puree not pumpkin pie filling
  • 1-2 tablespoons maple syrup or honey adjust to taste
  • 1/4 teaspoon pumpkin pie spice
  • 1/4 teaspoon vanilla extract
  • pinch sea salt
  • whipped cream optional, for topping
  • ground cinnamon or nutmeg optional, for garnish

Instructions
 

  • Brew your coffee stronger than usual (about 1.5× your normal strength) or prepare espresso shots.
  • In a small saucepan over medium heat, whisk together the pumpkin puree, milk, maple syrup, pumpkin pie spice, vanilla extract, and salt. Stir continuously to prevent the mixture from scorching.
  • Warm the mixture until steaming but not boiling (about 3 minutes). You're aiming for approximately 150°F if you have a thermometer handy.
  • Pour the coffee into your favorite mug, then add the pumpkin-milk mixture. Use a milk frother if available, or transfer everything to a blender and pulse for 20 seconds to create frothiness.
  • Top your spiced pumpkin latte with a dollop of whipped cream if desired, and dust with a sprinkle of cinnamon or nutmeg.

Notes

The pumpkin-milk mixture can be prepared in advance and stored in an airtight container in the refrigerator for up to 3 days. For a lower sugar version, replace maple syrup with monk fruit sweetener or stevia. For keto enthusiasts, use erythritol instead of maple syrup and heavy cream mixed with water instead of milk.
