Ingredients
  

  • 2 pounds chicken wings split at joints, tips removed
  • 2 tablespoons baking powder not baking soda
  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper

Spicy Sauce

  • ½ cup hot sauce Frank's RedHot recommended
  • 3 tablespoons unsalted butter melted
  • 1 tablespoon honey optional, for sweet heat balance
  • 1 teaspoon apple cider vinegar
  • ¼ teaspoon cayenne pepper adjust to heat preference

Instructions
 

  • Pat the chicken wings dry with paper towels. Place them in a large bowl and let them sit uncovered in the refrigerator for 30 minutes if time allows.
  • In a small bowl, combine the baking powder, salt, garlic powder, onion powder, smoked paprika, and black pepper. Sprinkle this mixture over the wings and toss until evenly coated.
  • Preheat your oven to 425°F (220°C). Line a baking sheet with aluminum foil and place a wire rack on top. Spray the rack with non-stick cooking spray. Arrange the wings in a single layer on the rack, ensuring they don't touch.
  • Bake the wings for 20 minutes, then flip them over and continue baking for another 25-30 minutes until they're golden brown and crispy. The internal temperature should reach 165°F (74°C) when tested with a meat thermometer.
  • While the wings bake, whisk together the hot sauce, melted butter, honey (if using), apple cider vinegar, and cayenne pepper in a medium bowl.
  • When the wings are done, transfer them to a large bowl and pour the sauce over them. Toss until evenly coated. For maximum flavor penetration, let them rest for 3-5 minutes before serving.

Notes

For maximum crispiness, pat the wings very dry before seasoning.
Baking powder (NOT baking soda) is the secret to crispy skin - don't skip it!
For less heat, reduce the amount of hot sauce and cayenne pepper.
Serve with celery sticks and blue cheese or ranch dressing.
