Ingredients
  

For the Chicken Salad

  • 2 cups cooked shredded chicken rotisserie chicken works beautifully
  • 1 ripe mango diced into small cubes
  • 1 red bell pepper finely diced
  • 1/4 cup red onion finely chopped
  • 2 tablespoons fresh cilantro chopped
  • 1 jalapeño seeded and minced (adjust to heat preference)
  • 1 lime juiced
  • 2 tablespoons olive oil
  • 1 teaspoon honey optional
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne pepper or to taste
  • salt and pepper to taste
  • 8-10 large butter lettuce leaves romaine or iceberg can substitute

Instructions
 

  • If not using rotisserie chicken, cook and shred chicken breasts. Otherwise, shred your pre-cooked chicken into bite-sized pieces.
  • In a large mixing bowl, combine the diced mango, red bell pepper, red onion, cilantro, and jalapeño.
  • In a small bowl, whisk together lime juice, olive oil, honey (if using), cumin, and cayenne pepper. Season with salt and pepper to taste.
  • Add the shredded chicken to the mango salsa mixture. Pour the dressing over the ingredients and toss gently until everything is evenly coated.
  • For best flavor, cover the chicken salad mixture and refrigerate for at least 30 minutes to allow the flavors to meld.
  • Wash the lettuce leaves thoroughly and pat them dry with paper towels.
  • Spoon approximately 1/3 cup of the chicken-mango mixture into each lettuce leaf. Add your chosen garnishes like avocado slices, extra cilantro, or crushed nuts.

Notes

For a vegetarian version, substitute chicken with 1½ cups of chickpeas or crumbled firm tofu. Pineapple can replace mango for a different tropical twist. Store the chicken-mango mixture separately from the lettuce leaves if preparing ahead of time, and assemble just before serving for maximum crispness.
