Creamy Base

  • 8 oz cream cheese softened, room temperature
  • 1 cup powdered sugar sifted
  • 1 tsp vanilla extract pure, not imitation
  • 1 cup heavy whipping cream whipped to stiff peaks
  • 1 tbsp lemon juice freshly squeezed

Strawberry Component

  • 2 cups fresh strawberries hulled and diced (about 1 pound)
  • 1/4 cup granulated sugar
  • 1 tbsp lemon juice

Garnish

  • 1/4 cup graham cracker crumbs
  • fresh strawberry slices for garnish
  • fresh mint leaves optional

Instructions
 

  • Combine diced strawberries with granulated sugar and lemon juice in a bowl. Stir gently to coat all berries. Let them sit for 10 minutes to release their juices, creating that perfect strawberry essence.
  • In a large bowl, beat the softened cream cheese until completely smooth and fluffy (about 2 minutes). Add powdered sugar gradually while continuing to beat, ensuring a silky consistency. Mix in vanilla extract and lemon juice until well incorporated.
  • Gently fold the whipped heavy cream into the cream cheese mixture using a spatula. Use a light hand with an under-and-over motion rather than stirring, which preserves the airy texture.
  • Reserve 2 tablespoons of the macerated strawberries for garnish. Fold the remaining strawberry mixture into the cheesecake base, creating beautiful pink streaks throughout.
  • Transfer the dip to a serving bowl, cover with plastic wrap, and refrigerate for at least 30 minutes (though 1-2 hours will develop flavors more fully).
  • Before serving, top with graham cracker crumbs, reserved strawberries, fresh strawberry slices, and mint leaves if using.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days.
Place plastic wrap directly on the surface of the dip to prevent a skin from forming.
Not recommended for freezing, as the texture will become watery upon thawing.
For a lighter version, use 1/3 less-fat cream cheese or substitute Greek yogurt for half the cream cheese.
