Salad Ingredients

  • 2 cups fresh strawberries hulled and quartered
  • 2 medium cucumbers thinly sliced
  • 1/4 cup red onion finely sliced
  • 2 tablespoons fresh mint leaves chopped
  • 2 tablespoons fresh basil chopped (optional)
  • 1/3 cup feta cheese crumbled

Dressing

  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey or maple syrup
  • salt and freshly ground black pepper to taste

Instructions
 

  • Wash the cucumbers thoroughly and slice them thinly, about 1/8-inch thick. If using regular cucumbers with thicker skins, consider peeling them partially.
  • Hull the strawberries by removing the green tops, then quarter them.
  • Thinly slice the red onion. To mellow the sharp flavor, you can soak the slices in cold water for 10 minutes, then drain thoroughly and pat dry.
  • In a large bowl, gently toss together the cucumbers, strawberries, red onion, mint, and basil (if using).
  • In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper until well combined.
  • Drizzle the dressing over the salad ingredients and gently toss to coat evenly. Top with crumbled feta cheese.
  • For best results, let the salad chill for 30 minutes before serving to allow the flavors to meld together.

Notes

For a lower calorie version, reduce the olive oil to 1.5 tablespoons and use light feta cheese.
For a dairy-free adaptation, substitute feta with avocado chunks or toasted sliced almonds.
Store any leftover salad in an airtight container in the refrigerator for up to 24 hours.
If preparing ahead, keep the dressing separate until ready to serve.
