- 2 cups fresh strawberries hulled and sliced (frozen can work in a pinch)
- 1 cup freshly squeezed lemon juice approximately 6-8 lemons
- 3/4 cup granulated sugar or 1/2 cup honey for a natural alternative
- 4 cups cold water
- 2 cups club soda or sparkling water
- ice cubes for serving
- fresh mint leaves for garnish
- strawberry slices and lemon wheels for garnish
- Place the hulled strawberries in a blender or food processor and pulse until smooth. For a truly silky texture, pulse in 10-second intervals rather than continuous blending.
- In a large pitcher, combine the freshly squeezed lemon juice and sugar. Stir vigorously until the sugar dissolves completely. If using honey instead, warm it slightly to help it incorporate more smoothly.
- Add the cold water to the lemon-sugar mixture and stir well. Then fold in the strawberry puree gently using a silicone spatula with a figure-eight motion. Cover and refrigerate for at least 30 minutes to allow the flavors to marry.
- Just before serving, add the club soda or sparkling water to the pitcher and stir gently—just 2-3 rotations with a long spoon to avoid flattening your fizz.
- Pour the Strawberry Lemonade Fizz over ice-filled glasses, garnish with fresh strawberry slices, lemon wheels, and a sprig of mint. Gently tap the mint between your palms before garnishing to release aromatic oils.
For a healthier version, try using stevia or monk fruit sweetener to reduce calories by 75%.
Add carbonation only to portions you're serving immediately to maintain the fizz.
The base mixture (without carbonation) can be stored in an airtight container for up to 3 days in the refrigerator.
Freeze the base into popsicle molds for a delightful frozen treat (omit club soda for better freezing). Calories: 95kcalCarbohydrates: 24gPotassium: 120mgSugar: 22gVitamin C: 85mg
