For the salad

  • 4 cups mixed spring greens baby spinach works beautifully as a substitute
  • 2 cups fresh strawberries hulled and sliced (about 1 pint)
  • 1/2 cup crumbled feta cheese substitute goat cheese for a tangier flavor
  • 1/3 cup thinly sliced red onion
  • 1/4 cup sliced almonds toasted (walnuts or pecans are excellent alternatives)
  • 1 avocado diced

For the balsamic vinaigrette

  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar white balsamic creates a lighter color
  • 1 tablespoon honey maple syrup works for a vegan option
  • 1 teaspoon Dijon mustard
  • 1 small clove garlic minced
  • salt and freshly ground black pepper to taste

Instructions
 

  • In a dry skillet over medium heat, toast your almonds or chosen nuts for 3-5 minutes, stirring frequently until golden and fragrant. Set aside to cool.
  • Hull and slice the strawberries. For the most vibrant flavor, choose strawberries that are fully red with no white shoulders.
  • In a small bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, minced garlic, salt, and pepper until emulsified.
  • In a large salad bowl, combine the mixed greens and red onion. Toss lightly with about half of the dressing, ensuring even coating.
  • Gently fold in the sliced strawberries and diced avocado to prevent bruising. Sprinkle with the crumbled feta cheese and toasted nuts.
  • Drizzle the remaining dressing over the top or serve on the side. Serve immediately for the freshest texture and flavor experience.

For maximum freshness, store components separately if preparing in advance. Dress the greens just before serving.
