Ingredients
  

For the Bread

  • 2 cups all-purpose flour substitute with 1:1 gluten-free flour blend if needed
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 cup unsalted butter softened (or plant-based butter for dairy-free option)
  • 3/4 cup brown sugar packed (light or dark will work)
  • 1/4 cup granulated sugar
  • 2 large eggs room temperature (or flax eggs for vegan version)
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk or 1/2 cup milk mixed with 1/2 tablespoon lemon juice
  • 2 cups diced apples approximately 2 medium apples - Honeycrisp or Granny Smith recommended
  • 3/4 cup toffee bits plus extra for topping

For the Toffee Glaze

  • 1/4 cup brown sugar
  • 2 tbsp butter
  • 2 tbsp milk
  • 1/2 tsp vanilla extract
  • 1/2 cup powdered sugar sifted

Instructions
 

  • Preheat your oven to 350°F (175°C) and position a rack in the middle. Grease and flour a 9x5-inch loaf pan or line it with parchment paper for easy removal.
  • In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg until evenly combined.
  • In a large bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3-4 minutes.
  • Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Mix in the vanilla extract.
  • Gradually add the dry ingredients to the butter mixture in three portions, alternating with the buttermilk and beginning and ending with the dry ingredients. Mix just until combined after each addition.
  • Gently fold in the diced apples and toffee bits until evenly distributed throughout the batter.
  • Pour the batter into the prepared loaf pan, spreading it evenly. Sprinkle additional toffee bits on top if desired.
  • Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  • While the bread is cooling, prepare the glaze. In a small saucepan, combine the brown sugar, butter, and milk. Bring to a simmer over medium heat, stirring constantly until the sugar dissolves.
  • Remove from heat, stir in vanilla extract, and gradually whisk in the powdered sugar until smooth.
  • Once the bread has cooled in the pan for 15 minutes, remove it to a wire rack. While still warm, drizzle the toffee glaze over the top, allowing it to drip down the sides.
  • Let cool completely before slicing to allow the flavors to meld perfectly.

Notes

- Toss apple pieces in a tablespoon of flour before adding to prevent them from sinking to the bottom during baking.
- Store at room temperature in an airtight container for up to 3 days, refrigerate for up to 1 week, or freeze individual slices for up to 3 months.
- For a healthier version, replace half the all-purpose flour with whole wheat flour, reduce sugar and use unsweetened applesauce for natural sweetness.
