- 1 cup fresh strawberries hulled (frozen works too, just reduce ice slightly)
- 1 cup fresh pineapple chunks canned in juice works as an alternative
- 3/4 cup coconut cream not cream of coconut, which is sweetened
- 1/4 cup coconut milk for added creaminess
- 2 tablespoons honey or maple syrup adjust to taste
- 1 tablespoon fresh lime juice brightens all flavors
- 1 1/2 cups ice cubes
- Pineapple wedges, strawberries, or maraschino cherries for garnish
- Wash and hull the strawberries, ensuring all green parts are removed. For pineapple, use fresh chunks or drain canned pineapple while reserving a tablespoon of juice for added flavor.
- Add coconut cream and milk to the blender first, followed by honey, lime juice, then fruits, and finally ice.
- Start blending on low speed for 10-15 seconds, then increase to high for another 30-45 seconds until smooth. If your blender struggles, pause and redistribute ingredients before continuing.
- Taste and adjust sweetness or thickness. Too thick? Add a splash of pineapple juice. Not sweet enough? Add more honey. Too sweet? Add more lime juice.
- Pour into chilled hurricane glasses or mason jars. For presentation, drizzle a teaspoon of coconut cream on top and garnish with fresh pineapple wedges, strawberry halves, or paper umbrellas.
Pro tip: Freeze fresh strawberries and pineapple chunks for 30 minutes before blending for an extra-cold drink without diluting flavors.
Greek yogurt can replace some coconut cream for a tangier, protein-rich option.
Mango chunks work wonderfully in place of strawberries.
Fresh is best, but you can refrigerate leftover mixture for up to 24 hours in an airtight container. Calories: 215kcalCarbohydrates: 28gProtein: 2gFat: 12gSugar: 23gVitamin C: 68mg
