Mixing Bowl
- 8 oz cream cheese softened
- 1 cup sour cream
- 1½ cups shredded cheddar cheese sharp provides the most robust flavor
- ½ cup shredded mozzarella
- 8 slices bacon cooked crispy and crumbled
- 3 green onions thinly sliced (white and green parts separated)
- 2 cloves garlic minced
- 1 tsp Worcestershire sauce
- ½ tsp smoked paprika
- ¼ tsp cayenne pepper adjust to taste
- salt and freshly ground black pepper to taste
Preheat your oven to 350°F (175°C). Cook your bacon until crispy, then crumble and set aside, reserving about 2 tablespoons for garnish.
In a large mixing bowl, beat the softened cream cheese until smooth and fluffy.
Fold in the sour cream, 1 cup of cheddar cheese, mozzarella, white parts of the green onions, minced garlic, Worcestershire sauce, smoked paprika, and cayenne pepper. Season with salt and pepper to taste.
Gently fold the crumbled bacon (except the reserved portion) into your cheese mixture.
Transfer the mixture to a 1-quart baking dish and sprinkle with the remaining ½ cup of cheddar cheese.
Bake for 20 minutes or until the edges are bubbling and the top is golden brown.
Sprinkle with the reserved bacon crumbles and green parts of the green onions. Let stand for 5 minutes before serving.
For a lighter version, you can substitute Neufchâtel for cream cheese and Greek yogurt for sour cream. Turkey bacon works as a leaner alternative to regular bacon.
This dip can be prepared up to 24 hours in advance and refrigerated. Add an extra 5-7 minutes to the baking time when cooking from cold.
Serve with crusty bread, fresh vegetables, pretzel rods, or pita chips for a complete appetizer experience.
