Ingredients
  

  • 6 cups watermelon chilled and cut into 1-inch cubes
  • 8 ounces feta cheese crumbled or cubed
  • 1 small red onion thinly sliced (about ½ cup)
  • 1/4 cup fresh mint leaves torn or roughly chopped
  • 1/4 cup fresh basil leaves torn or roughly chopped
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lime juice
  • 1 tablespoon balsamic glaze optional
  • 1/2 teaspoon freshly ground black pepper
  • 1 pinch sea salt go easy as feta is already salty
  • 1/4 cup toasted pine nuts or sliced almonds optional

Instructions
 

  • Cut the watermelon into evenly sized cubes, approximately 1-inch each. For maximum flavor, chill the cubed watermelon for 30 minutes before assembling the salad.
  • Slice the red onion as thinly as possible. For a milder flavor, soak the slices in ice water for 10 minutes before draining and adding to the salad.
  • Gently tear or roughly chop the mint and basil leaves just before assembling the salad.
  • In a large bowl, combine the chilled watermelon cubes, feta cheese, and sliced red onion. Toss gently to distribute ingredients evenly.
  • Sprinkle the torn herbs over the salad. Drizzle with olive oil and lime juice, then add freshly ground black pepper and a pinch of salt. If using, add the balsamic glaze and toasted nuts.
  • With clean hands or salad servers, gently fold the ingredients together with a lifting motion rather than stirring. Serve immediately for optimal texture contrast.

Notes

This salad is best enjoyed fresh, but components can be prepared separately up to 24 hours in advance. If you find raw onions too pungent, soaking the slices in ice water for 10 minutes will reduce their bite while maintaining their crisp texture.
