Ingredients
  

  • 4 cups seedless watermelon cut into 1-inch cubes
  • 8 ounces feta cheese cut into ¾-inch cubes
  • 1 cucumber sliced into ½-inch rounds (optional)
  • 1 cup fresh mint leaves
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic glaze
  • 1/4 teaspoon freshly ground black pepper
  • 1 pinch sea salt
  • 20-25 wooden skewers 6-inch

Instructions
 

  • Cut your watermelon into consistent 1-inch cubes, removing any seeds. Pat the cubes gently with paper towels to remove excess moisture.
  • Cut the feta into ¾-inch cubes, slightly smaller than the watermelon. For best results, refrigerate feta for about 30 minutes before cutting to help it hold its shape better.
  • Assemble the skewers starting with a watermelon cube, followed by a mint leaf (folded in half for easier assembly), then a feta cube. For more complex skewers, add a cucumber slice before repeating the pattern. Leave about ¼ inch of the skewer exposed at both ends.
  • Whisk together the olive oil, balsamic glaze, black pepper, and a tiny pinch of sea salt until well combined.
  • Arrange the skewers on a serving platter, then lightly drizzle with the balsamic mixture just before serving.

Notes

These skewers are best assembled no more than 2 hours before serving to maintain optimal texture. You can prepare all components separately up to 24 hours ahead of time.
For a dairy-free version, substitute the feta with firm tofu marinated in lemon juice, nutritional yeast, and herbs.
These pair beautifully with rosé wine or sparkling water with mint for a refreshing summer appetizer.
