Ingredients
  

Main Ingredients

  • 2 cups plain Greek yogurt full-fat provides the creamiest result, but low-fat works too
  • 1 package unflavored gelatin 0.25 oz
  • 2-3 tablespoons honey or maple syrup adjust to taste
  • 1 teaspoon vanilla extract optional but recommended
  • 1 cup fresh berries strawberries, blueberries, or raspberries

For Gelatin Preparation

  • 1/4 cup cold water for blooming gelatin
  • 1/4 cup hot water for dissolving gelatin

Instructions
 

  • Pour ¼ cup cold water into a small bowl and sprinkle the unflavored gelatin evenly over the surface. Let it stand for about 5 minutes to bloom.
  • Heat ¼ cup water in a small saucepan until almost boiling. Remove from heat and add the bloomed gelatin, stirring constantly until completely dissolved (about 2 minutes).
  • In a large bowl, combine the Greek yogurt with honey (or your chosen sweetener) and vanilla extract.
  • While whisking the yogurt mixture, slowly pour in the dissolved gelatin in a thin stream, continuing to whisk until fully incorporated.
  • Pour the mixture into individual serving dishes or a single large dish. Cover with plastic wrap (touching the surface to prevent a skin from forming).
  • Refrigerate for at least 3-4 hours, preferably overnight. When set, top with fresh berries before serving.

Notes

For best results, allow the dissolved gelatin to cool slightly before adding to the yogurt to prevent curdling. The dessert will keep refrigerated for up to 5 days but is best consumed within 48 hours. For a dairy-free version, use coconut or almond milk yogurt alternatives.
